Today's recipe is a very simple one and perfect for beginners like me (ahem). My mum used to make these when my sister and I were little and she's still making them, It's kind of a tradition and Christmas without these, wouldn't be a real christmas. At least for me.
Ingrediants:
dough:
- 250g flour
- 125g sugar
- 150g butter
- 1 egg
icing:
- 125g icing sugar
- 2-3 tbsp lemon juice
- differnt toppings, like chocolate chips, chopped hazelnuts, raisins...
preparation time: 40 min
rest time: 1 hour (can be skipped, if necessary)
Method:
- Give flour, sugar, butter and the egg in a bowl. Knead all ingrediants with your hands, until you get a smooth and tight dough. Roll a ball, and wrap it in cling film. Let the dough rest for an hour (or more) in your fridge.
- Pre-head oven to 180°C. Put baking paper on a baking tin and start to roll the dough about 3 to 4 mm.
- Choose your favourite cutters and cut out your cookies. Place them on the baking tin and bake them for about 10 min until they are golden.
- When the cookies cooled down, take a knife or brush to cover the cookies with the icing. For the icing mix icing sugar and lemon juice (tip: add lemon juice one by one. So you can see, how much juice you'll need.) Add the toppings before it dries.
- Now they're ready to
eatserve.
This recipe can be used any time, not only for christmas. It's someone's birthday and you want to give him something special and self-made? Why not bake some cookies? You could add chocolate chips or other things the person may like. Just experiement. That's the fun part of baking!
